Dinner for Two

Daddy bought Mama "The Gourmet Toaster Oven" cookbook for Valentimes (vs. Mother's Day?) several years ago. However. We did not own a toaster oven. (Sometimes Daddy misses the details). Until Santa's recent visit that is.

I made a few things out of the cookbook over the years anyhow. Turkey, Tarragon and Apple Meatloaf, doubled or tripled and into the regular oven. Herbed Oven-Fried Chicken. Its a pretty little cookbook. Simple, but sophisticated. Pretty pictures.

But, alas. Haha. I love my new fancy-pants, six-slice toaster oven. Thank you Santa! I have already made the delicious Samosas, to go with another batch of Mulligatawny. And tonight, tasty Turkey Pot Pies!

Basic Pie Crust Dough
1 1/2 c. flour
1/2 c. very cold butter, cut into 8 pieces
1/2 t. salt
1/4 c. ice water

Put everything except water in food processor until resembles coarse cornmeal. Quickly add ice water while machine runs, until evenly distributed. Gather and roll out on floured surface. I divided in half. Cut out two 5-inch squares with each half (4 total) and froze two squares.

Pot Pie
serves 2
1 T. butter
1 1/2 T flour
1 c. chicken stock
1 carrot, peeled and sliced
1 small potato, peeled and diced
1 handful mushrooms, diced
1/4 c. frozen peas
1/2 T. fresh thyme
1 c. canned turkey
S&P to taste

Preheat toaster to 375. Melt butter in saucepan over medium. Add flour and cook, stirring, until bown. Increase to med-high and slowly add stock, whisking constantly, until thick enough to coat spoon. Add veggies and cook ten minutes or until slightly soft. Stir in thyme and turkey. Add S&P. Divide into two 10-ounce cups. Top with dough. Brush with egg white. Bake 20 minutes, until top golden brown. Cool slightly.
