The chicken smelled AWESOME and tasted just okay. The spinach-couscous was so simple and very tasty, will definitely make this side again! Alas, a very quick meal, with simple ingredients.
Spice-Rubbed Chicken with Israeli Couscous
from Martha Stewart's Food Everyday
for one
2 1/2 t. olive oil
1/4 c. Israeli couscous
1 garlic clove, minced
salt and pepper
2 c. fresh baby spinach
1 T. sliced almonds (i used cashews cuz thats what we had - yummy)
1 chicken breast
1 1/2 t. garam masala
In saucepan, heat 1/2 t. oil over medium. Add couscous, cook, stirring, until lightly toasted, 1-2 minutes. Add 1/2 c. water and garlic; season with salt and pepper. Bring to boil; cover, and reduce heat to low. Cook until liquid is almost absorbed, about 6 minutes. Add spinach, and cook until couscous is tender, 1 minute. Stir in nuts, set aside.
Sprinkle chicken with garam masala; season with salt and pepper. In a small skillet over medium-low, heat 2 t. oil. Add chicken; cook until opaque throughout, 6-8 minutes per side.
